Rayan Cherki put the hosts ahead again, but Brobbey tapped into an empty net to bring the scores level.
Antoine Semenyo scored twice to make City’s lead comfortable, before Brobbey completed his hat-trick.
Erling Haaland then made the result certain as they went three points clear of Arsenal.
